Arroz con Pollo. The Arroz con Pato (Peruvian Duck with Rice) last night was so good, and I had leftover rice so I did it with chicken for tonight.

The way you reused and reimagined the dish, without losing its flavor or soul, says a lot about your intuition in the kitchen. And let me tell you it’s a total classic (we call it a “clásico” when two criollo dishes are such a perfect match that they’re traditionally served together) to pair it with a good papa a la huancaína. That would be a full-on celebration, right? 🎉
