      Description:
      Golden Hour is a nostalgic, slow-sunset kind of dessert. A rich banana custard ice cream paired with warm, spiced Bananas Foster and buttery toasted pecans. The ice cream is velvety and smooth, made with ripe bananas, cream, and egg yolks, brightened with a splash of lemon and a touch of vanilla. It’s served over sizzling caramelized bananas bathed in dark rum, brown sugar, cinnamon, and butter, then crowned with toasted pecans.

      Techniques applied:
      This time I used an ice cream machine to churn a classic French-style custard base. The process included tempering egg yolks with a warm mixture of milk, cream, sugar, and salt, gently cooking it until thickened, and then incorporating mashed ripe bananas, lemon juice, and vanilla extract. After chilling, the mixture was churned until luxuriously smooth.
      The Bananas Foster topping was made by caramelizing banana slices in butter, dark brown sugar, and cinnamon, deglazing with dark rum and finishing with vanilla and toasted pecans.

      Ingredients & toppings used:
      For the ice cream: Heavy cream; Whole milk; Granulated sugar; Egg yolks; Ripe bananas; Lemon juice; Vanilla extract; Pinch of salt

      For the topping – Bananas Foster with Pecans: Ripe bananas; Unsalted butter; Dark brown sugar; Ground cinnamon; Dark rum; Vanilla extract; Toasted pecans

      Most challenging part:
      Perfecting the custard without scrambling the yolks, and maintaining the natural banana flavor without it turning dull after churning. Timing and texture of the Foster sauce was another delicate dance. Caramel must be deep but not bitter, rum bold but not overpowering.

And the Foster sauce looks perfectly cooked no crystallization and it kept its shine.

        Have you tried adding a touch of flaky salt or fleur de sel at the end to balance the caramel’s sweetness and enhance the banana flavor?

          I actually did add a pinch of salt to the caramel, just enough to lift the flavors and round out the sweetness.

          As for the flambé… let’s just say I didn’t feel like setting my kitchen (or eyebrows) on fire at 39°C 😅 No dramatic flames this time, just a gentle simmer and lots of stirring. Maybe I’ll brave it when the weather cools down!

            Qué belleza de helado!! Has logrado un postre suculento y cálido, que invita a tomar despacio, disfrutando de cada cucharada. Un postre para tomar mientras se conversa, en voz baja. Es expectacular, y la rextura se ve tan bien.
