My wife is Filipina, so I wanted to create something inspired by Filipino flavours — but with a bit of a modern twist just for her.
I made a Ube Macapuno Ice Cream (purple yam + coconut), paired with a Salted Yema Crumble and a crispy coconut tuile for texture. The earthiness of the ube with the sweet-salty yema and coconut crunch worked better than I expected.
Techniques I used:
Churned custard-style ice cream base
Caramelised egg yolk fudge (yema)
Thin baked tuile for contrast
Most challenging part?
Getting the yema crumble to set right without turning into toffee — took a few tries and lots of fridge checking 😅
I’m an amateur, just doing this for the love of food and to make my wife smile.

I’m definitely open to experimenting more with Filipino cuisine, especially with a bit of Australian fusion. I’ve been playing around with ideas like a mango float pavlova, and crocodile adobo is next on the list! I’m also keen to create a proper Filipino-style curry — something that uses traditional Filipino ingredients but leans on Thai-style techniques, since I feel the Philippines is still missing a truly standout curry dish. Lots to explore and I’m loving the journey so far!
