    Dear All, I have tried the Vanilla Icing recipe from the Pure Vanilla Eclair course of Chef Fran Segura. First of all I can not find any video of this recipe. Second the icing is very very thick when I do it so I assume I must be doing something wrong. Or is it possible that the amount of white chocolate is wrong in the recipe book? Any help will be greatly appreciated as I love love love vanilla…. Many thanks. Steve

    At the moment we do not have the video of preparing the glaze but you have the instructions in the recipe book.

    On the other hand, the vanilla frosting must maintain a temperature between 22°C and 23°C so that it remains fluid. If your frosting is too thick, you can try putting it in the microwave for 10 to 15 seconds to soften it. Remember that when you have this chocolate glaze it solidifies quickly when its temperature drops.
