    The shelf life and storage of chocolate bonbons filled with ganache depend on the type of ganache used:

    1. Traditional Ganache (chocolate + cream)

    ▪️Shelf life: 2 to 3 weeks

    ▪️Storage: between 14 and 18°C (57–64°F), in a dry, dark place, free from strong odors.

    ▪️Relative humidity: ideally below 60%Important: Do not refrigerate, as condensation can form and affect the quality of the chocolate.

    2. Ganache with fruit pulp or water-based ingredients

    ▪️Shelf life: 5 to 7 days if no preservatives are added.

    ▪️Storage: between 4 and 8°C (39–46°F) — refrigeration is required due to the higher water activity.

    Notes:

    Shelf life can be extended by using natural preservatives like potassium sorbate or alcohol (e.g., liqueurs).

    Water activity can also be reduced by incorporating invert sugar, glucose, or additional cocoa butter.

    General Tip:

    If you’re aiming for a longer shelf life, it’s always recommended to measure the water activity (Aw). For bonbons intended for commercial sale, keeping the Aw below 0.85 is key to preventing microbial growth.
