@soldamiani maybe a little more vertical, but probably not 90 °. 🙂 It is of course not only for the presentation, also for the crunch and taste.

This tomato tartare looks amazing! The presentation is so attractive, and the colors really catch the eye. You can tell a lot of care went into the details, it’s definitely a beautiful dish that makes you want to try it.

120 egg White
20 ml sunflower oil
0.2 g Salt
6 g Vera peppermix everything until smooth.
Poor in the mould, bake about 8-10 minutes. (depends on the mould)
I used halve of the recipe above.
