Where, what lesson, is the making of the raisin sour dough starter. At the beginning of the panettone lesson, the chef says he will show how to make the levain. I cannot find it!

In the recipe book, on page 5, you will find the ingredients and instructions for the levain (starter), and in chapter 3, there’s a full explanation on how to prepare it in the video.
