Is there a difference between glucose 40 DE and normal glucose syrup? Can I substitute one for the other?

Glucose and glucose syrup are not the same product since glucose has a lower glycemic load as it contains less sugar.
You could try substituting it with glucose syrup, we advise you to prepare a small portion of the recipe with the glucose substitute and see if you get the result you are looking for.Greetings
