    Yes, you can absolutely use gelatin mass made from powdered gelatin instead of the gelatin sheets the recipe calls for you just need to adjust the proportions accordingly.

    How do you make gelatin mass?

    Simply hydrate the powdered gelatin in cold water using this ratio:

    • 1 part powdered gelatin

    • 5 parts water

    For example: 10 g of powdered gelatin + 50 g of cold water = 60 g of gelatin mass
    Let it sit for about 10 minutes until it forms a firm, jelly-like mass. That’s your “gelatin mass”.

    How do you use it to replace gelatin sheets?

    Each standard gelatin sheet is equivalent to about 2 g of pure gelatin, so:

    1 gelatin sheet ≈ 12 g of gelatin mass
