With water-bath bakes, my biggest challenge has always been preventing cracks—they happen so easily if the temperature or moisture isn’t right. What helped the most was baking low and slow, wrapping the tin tightly so no water leaks in, and letting the cheesecake cool gradually in the oven.
That gentle heat + slow cooling is what gives the surface that smooth, crack-free look.
