Hi and welcome to the Scoolinary community, Charley! 👋
It’s great to have you here sharing your creations. The lamb chops look beautifully seared, and the garnish brings nice contrast in both color and texture. The edible flowers add a delicate touch—consider tightening the purée’s texture to get a cleaner sweep on the plate. As for the fried calamari, the coating looks crisp and even, and I really like the height and movement you achieved. A slightly thicker sauce might help the structure hold even better on the plate.
👉 What was the biggest technical challenge you faced with these dishes? Texture, doneness, balance…?
Since you’re just starting with Scoolinary, what are you hoping to find here? Specific techniques, visual inspiration, ongoing training?
