This is a stunning plate—elegant, modern, and deeply rooted in flavor contrast. The char on the Jerusalem artichoke is spot on, and that cashew cream adds the perfect creamy base to carry all the other layers. Beautiful balance of texture and acidity. Bravo, Chef.
