      Pommes d’Amour

      Duchess Potatoes with Roasted Garlic and Tomato Sauce

      Profile: Amateur

      Ingredients: Potatoes (Yukon Gold); Roasted garlic (whole head); Butter; Heavy cream; Parmesan cheese (grated); Egg yolk; Chopped parsley; Salt and black pepper; San Marzano tomatoes; Yellow onion; Garlic (minced); Extra virgin olive oil; Sugar (acidity balance)

      Duchess Potatoes:

      1. Roasting (Roasted garlic)

      A whole head of garlic is wrapped in aluminum foil and slow-roasted in the oven at around 180°C until soft and caramelized. This transforms the garlic into a mellow, sweet, aromatic purée that blends seamlessly into the mashed potato base, adding complexity and depth.

      2. Boiling (Potatoes)

      Potatoes are boiled in salted water until fork-tender. The starchy nature of Yukon Gold potatoes yields a fluffy and smooth mash, ideal for Duchess-style piping.

      3. Ricing (Potato purée)

      The boiled potatoes are passed through a fine-mesh food mill or ricer to create a silky texture free of lumps, ensuring precision piping and refined presentation.

      4. Emulsification (Incorporating fats and cream)

      Butter, roasted garlic, heavy cream, parmesan, and seasoning are gently folded into the cooled potatoes to form a smooth emulsion. Temperature control is essential here to prevent the fats from breaking or curdling.

      5. Enrichment (Adding egg yolk)

      An egg yolk is mixed into the warm purée to enhance cohesion, contribute to a golden crust during baking, and elevate richness.

      6. Piping (Shaping the potatoes)

      The enriched mash is transferred to a piping bag fitted with a star tip and piped into elegant rosettes onto a baking tray. This classic Duchess shape offers visual appeal and structural integrity.

      7. Baking (Crisping and browning)

      The piped portions are baked at 200°C until golden-brown on the edges. This creates a contrast between the crisp exterior and creamy interior.

      Tomato Sauce:

      1. Concassé (Tomato preparation)

      Ripe San Marzano tomatoes are blanched briefly, shocked in ice water, peeled, deseeded, and finely diced. This traditional French technique enhances purity of flavor and controls texture in the sauce.

      2. Sautéing (Aromatics)

      Finely chopped onion and garlic are gently sautéed in extra virgin olive oil over medium heat until translucent and fragrant. This step builds the aromatic foundation of the sauce.

      3. Reduction (Concentrating the sauce)

      The diced tomatoes are added and simmered until excess liquid evaporates, resulting in a thick, richly flavored sauce. Seasoning includes salt, black pepper, a pinch of sugar for balance, and fresh parsley for brightness.

      4. Blending (Finishing texture)

      Once cooked, the sauce is blended into a smooth purée, creating a velvety texture that coats the palate and complements the creaminess of the potatoes.

      5. Seasoning Adjustment (Final balance)

      Final tasting and adjustments are made at the end – salt, pepper, and optionally a drizzle of olive oil to round out the flavor and add a subtle shine.

      Concept Behind the Dish:

      I’ve always believed that potatoes, humble and often underestimated, can become the highlight of a plate when treated with care. This time, I gave them a royal makeover and turned them into Duchess Potatoes.

      Inspired by the elegance of French cuisine, I wanted to unite the rustic heart of mashed potatoes with the refined touch of the fine-dining world. Roasted garlic offers a mellow sweetness and depth; butter and cream bring richness and indulgence; parmesan adds a nutty sophistication; and the piped form provides a beautiful, festive finish.

      The tomato sauce serves as the counterbalance. Slightly tangy, refreshingly bright, and full of character, it cuts through the richness and brings harmony to the dish. Together, they tell a story: simplicity does not mean lack of soul.

      For me, this dish is a small act of love for the everyday ingredients. A celebration of how, with intention and respect, the simplest things can shine. And as an amateur cook, that’s what inspires me most, to create something soulful out of the ordinary.

          @Sol Damiani Thank you so much, your message really made me smile. Believe it or not, this was my very first time making Pommes d’Amour, and I had no idea how it would turn out. I chose the name because I wanted the dish to feel like a little love note on a plate. When my husband took the first bite and gave me that look, the kind that says everything without saying a word, I knew that was the right name. I believe even the simplest ingredients can tell a love story when treated with intention. ☺️

        La salsa tiene vida con ese color tan vibrante y con su brillo. Y las patatas duquesas se ven doradas y crujientes por fuera, pero prometen ternura y la suavidad del terciopelo por dentro. Es un pláto cálido, y con esa elegancia francesa. Qué hambre!!!
