I’ve been wanting to make croissants, but I’ve always felt as though I needed to wait until I was more experienced at pastries. I’ve made laminated doughs before, but never yeasted laminated dough. For some reason, I turned it into a massive challenge in my mind, but when I followed the steps, it was actually one of the easier projects I’ve attempted. I used the Bachour recipe from the Croissants and Viennoiserie course here on Scoolinary. I need to refine my technique and try it a few more times to understand when the dough is fully proofed, but I am quite pleased with my very first attempt at this lovely pastry.
