  • Ribeyes from my local butcher last night. I just wanted some meat and potatoes. To balance it out we had a Japanese cucumber salad dressed with a sweet vinegar dressing that I didn’t get a picture of. Dry martini with three bleu cheese stuffed olives was mandatory.

    Cod & Kimchi Soup – In this recipe from The New York Times, kimchi takes center stage as the base for an umami-rich broth. Once cooked, the kimchi is tender and provides a counterpoint to perfectly poached cod. Other ingredients include mushrooms, shallots, ginger, garlic, gochujang, and soy sauce. It was tangy and spicy.

    Here is as 7.7 lb (3.5 kg) beef brisket, which is actually a little small. It was smoked using charcoal, oak and apple woods. The most challenging part was getting past the two hour stall at an internal temperature of 150°F (66°C). It finally finished after 12 hours at an internal temperature of 205°F / 96°C.

    Mu Shu Pork – one of the famous recipes from the Mandarin Restaurant in San Francisco. (Closed in 2006.) From the “Famous Dishes of the Mandarin” section of the book, “The Seventh Daughter” by owner Cecilia Chiang.

    They served them the American-Chinese way with wrappers to roll up the ingredients. I served the Chinese way – in a bowl over rice.
